Thai Lettuce Wraps

The prep and serving style of this meal are perfect for a small dinner gathering. Every step is simple to execute and can be shared with guests when they arrive. Assembling the wraps as you go allows you and your guests relax and talk around the dinner table. 

Serves 4 • Prep time 20 minutes • Cook time 20 minutes


  • 1 lb. boneless, skinless chicken breasts, sliced fajita style 
  • 1/4 C teriyaki sauce
  • 1 clove garlic, minced
  • 2 tsp olive oil
  • 1 head butter lettuce
  • 1 cucumber, cut into matchsticks
  • 3-4 carrots, cut into matchsticks
  • 1 package of Pad Thai or rice noodles
  • 1 lime, cut into wedges
  • 1 C crushed peanuts
  • Sriracha, sweet chili, or hoisin sauce for garnish


Cook noodles per package instructions.

Prep veggies. 

Heat skillet to medium heat, add olive oil, and sauté chicken for 3-4 minutes each side, until the inside is no longer pink.  Add the minced garlic the last minute of cooking to avoid burning the garlic. Set chicken aside. 

The butter lettuce needs to be washed and the leaves separated to use as wraps. 

When assembling the wraps, lay the butter lettuce on the plate, add on the noodles, chicken, and veggies, then add crushed cashews if desired. 

Garnish by squeezing a lime wedge or adding the sauce of your choice.  

Serving the ingredients family style allows your guests to make as many wraps as they would like.
